Brussels Sprouts Slaw



Coconut Bacon Ingredients


  • 1 7 oz bag of coconut flakes

  • 1 1/2 tbs liquid smoke

  • 3 tbs tamari

  • 2 1/2 tbs maple syrup

  • 1 tsp smoked paprika

  • Pinch of fresh peppercorn


Directions


  • Preheat oven 350°

  • Place coconut flakes in mixing bowl

  • Whisk remaining ingredients in separate bowl

  • Pour over coconut flakes, toss and coat thoroughly

  • Generously spray baking pan with coconut oil spray

  • Place bacon and pan evenly

  • Bake for 15 (give or take) and toss every few minutes to prevent burning


Slaw Ingredients


  • 1 9 oz bag of shaved Brussels Sprouts

  • 1 cup vegan Parmesan cheese

  • 1 cup of sliced almonds

  • 1 1/2 cup of coconut bacon

  • Place all ingredients in bowl

Dressing Ingredients


  • 1 shallot

  • 3 tbs apple cider

  • 2 tbs agave

  • juice of 1 lemon

  • juice of 1 large orange

  • 1/2 cup olive oil

  • 1/2 teaspoon pink Himalayan salt to taste

  • Place all ingredients in food processor for 30 seconds or so, pour over slaw and toss Recipe by @Insatiablevegan
