Open Faced Sassy Tofu Scramble

Ingredients


  • 14 oz extra firm organic tofu

  • 1/2 sweet white onion

  • 1/2 cup chopped parsley

  • 1 cup chopped mushrooms

  • 1/2 cup of chopped mixed red and green peppers

  • 1 tbs fresh chopped dill

  • 1/4 tsp tumeric

  • 1 tsp black salt

  • 1/4 cup nutritional yeast

  • cayenne pepper to taste large multi-grain OR spinach flour tortillas


Topping:

  • pico de gallo

  • Nafsika's Garden cheddar style shreds
