Soft Molasses Cookies
It's rare that I'll break out the sugar (no, seriously) in order to bake something but once a year I will indulge in freshly baked, soft molasses cookies!

I found this recipe on All Recipes originally but have revamped it. Here is my revised recipe below:
Ingredients
1 cup evoo (extra virgin olive oil)
1/4 cup raw cane sugar (or brown)
1 *egg replacer (to equal 1 egg)
3/4 cup molasses
3 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon ground cinnamon
1 teaspoon ground ginger
Method
Stir all ingredients together and let stand for 1 hour.
Roll to small balls and place on cookie sheet.
Bake at 350 degrees for 8-10 minutes.
* You can now find "Egg Replacers" at local grocery stores and certainly at health or organic shops. Or just buy them from Amazon. I use Bob's Red Mill!
